Master sushi chef Mr. Katsuyoshi Iijima
Mr. Iijima was born in Tokyo. He frequently visited Minamiboso, Chiba, for fishing as a hobby for 40 years.
He was attracted to the area by the nature and the people's warmheartedness and decided to open a sushi restaurant in Shiramazu, Chikura in 2004.
His restaurant operates on an appointment-based system, and limits the customers to one group at a time to let them feel comfortable while they have dinner or spend the night.
Iijima's sushi uses fresh fish caught in this area and rice that he grows without chemicals.
The chef cherishes contact with customers and explains the food and how to prepare dishes while he makes sushi at the counter, and also suggests suitable sake to match dishes.
He began participating in activities to spread sushi culture around the world in 2011, and began a sushi-making experience class in 2017.
He is licensed as a fugu chef, sake taster, shochu advisor, Chinese herbal cuisine instructor, vegetable sommelier and has a sushi proficiency certificate.
